Ingredients

4 thick-cut pork chops (bone-in or boneless)

Salt and black pepper, to taste

⅓ cup all-purpose flour, divided

2 tablespoons olive oil

8 ounces mushrooms, sliced

3–4 scallions, sliced (or 1 small onion, sliced)

2 cloves garlic, minced

1 cup chicken broth

½ cup sour cream

2 tablespoons butter

Fresh parsley, chopped (optional garnish)
Instructions

Pat pork chops dry and season both sides with salt and pepper. Lightly dredge each chop in flour, shaking off excess.

Heat olive oil in a large skillet over medium-high heat. Sear pork chops 4–5 minutes per side until golden brown. Remove from skillet and set aside.

In the same skillet, melt butter. Add mushrooms and scallions and cook until softened and lightly browned. Stir in garlic and cook 30 seconds.

Sprinkle remaining flour over the vegetables and stir to coat. Slowly whisk in chicken broth and simmer until thickened.

Reduce heat to low and stir in sour cream until smooth and creamy.

Return pork chops to the skillet or spoon gravy over the chops on a serving platter.

Garnish with fresh parsley and serve warm.
