This Peri Peri Grilled Chicken is juicy, smoky, spicy, and packed with bold flavor from a homemade peri peri marinade made with roasted peppers, garlic, lemon juice, and spices. Perfect for summer grilling, meal prep, and easy family dinners.

For the Chicken
- 3 pounds chicken thighs and drumsticks
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
For the Peri Peri Marinade
- 2 red bell peppers
- 4 Fresno peppers or red jalapeños
- 8 garlic cloves
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons red wine vinegar
- 1 tablespoon smoked paprika
- 2 teaspoons dried oregano
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey
Instructions
- Roast the bell peppers and Fresno peppers under the broiler or over an open flame until charred. Cover and let steam for 10 minutes, then remove skins and stems.
- Add roasted peppers, garlic, olive oil, lemon juice, vinegar, smoked paprika, oregano, onion powder, salt, pepper, and honey to a blender. Blend until smooth.
- Place chicken in a large zip-top bag or bowl. Pour the marinade over the chicken and coat evenly.
- Refrigerate for at least 4 hours or overnight for best flavor.
- Preheat grill to medium heat, about 375°F to 400°F.
- Remove chicken from the marinade and discard excess marinade.
- Grill chicken for 6 to 8 minutes per side, turning occasionally, until the internal temperature reaches 165°F.
- Rest for 5 minutes before serving.
- Garnish with fresh parsley and lime wedges if desired.
Notes
Make It Your Own
- Use boneless chicken thighs for faster cooking.
- Add extra Fresno peppers for more heat.
- Substitute lime juice for lemon juice.
- Finish with melted garlic butter before serving.
