Description

This Peri Peri Grilled Chicken is juicy, smoky, spicy, and packed with bold flavor from a homemade peri peri marinade made with roasted peppers, garlic, lemon juice, and spices. Perfect for summer grilling, meal prep, and easy family dinners.

For the Chicken

  • 3 pounds chicken thighs and drumsticks
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt

For the Peri Peri Marinade

  • 2 red bell peppers
  • 4 Fresno peppers or red jalapeños
  • 8 garlic cloves
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey


Instructions

  • Roast the bell peppers and Fresno peppers under the broiler or over an open flame until charred. Cover and let steam for 10 minutes, then remove skins and stems.
  • Add roasted peppers, garlic, olive oil, lemon juice, vinegar, smoked paprika, oregano, onion powder, salt, pepper, and honey to a blender. Blend until smooth.
  • Place chicken in a large zip-top bag or bowl. Pour the marinade over the chicken and coat evenly.
  • Refrigerate for at least 4 hours or overnight for best flavor.
  • Preheat grill to medium heat, about 375°F to 400°F.
  • Remove chicken from the marinade and discard excess marinade.
  • Grill chicken for 6 to 8 minutes per side, turning occasionally, until the internal temperature reaches 165°F.
  • Rest for 5 minutes before serving.
  • Garnish with fresh parsley and lime wedges if desired.

Notes

Make It Your Own

  • Use boneless chicken thighs for faster cooking.
  • Add extra Fresno peppers for more heat.
  • Substitute lime juice for lemon juice.
  • Finish with melted garlic butter before serving.
  • Reserve a little marinade before adding the chicken and use it as a finishing sauce.
