These Crispy Baked Pepperoni Chicken Rolls are stuffed with melty mozzarella and savory pepperoni, then baked until golden and topped with warm marinara sauce. An easy Italian-inspired chicken dinner that’s perfect for busy weeknights and guaranteed to be a family favorite.


Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • 2024 slices pepperoni

  • 1 cup shredded Italian blend cheese (or mozzarella)

  • 1 tablespoon fresh parsley, chopped

  • ½ cup all-purpose flour

  • 1 teaspoon Italian seasoning

  • 2 large eggs

  • 1 cup Italian-style breadcrumbs

  • ¼ cup grated Parmesan cheese

  • ½ cup marinara sauce

  • Cooking spray


Instructions

  • Preheat oven to 450°F. Spray an 11 x 9-inch baking dish or sheet pan with cooking spray.

  • Set up three shallow bowls:

    • Bowl 1: flour and Italian seasoning

    • Bowl 2: whisked eggs

    • Bowl 3: breadcrumbs mixed with Parmesan

  • Place chicken breasts between plastic wrap and pound to ¼-inch thickness. Season both sides with salt and pepper.

  • Layer pepperoni and shredded cheese over each chicken breast. Sprinkle with parsley.

  • Roll up chicken tightly, tucking in sides as needed.

  • Dip each roll into flour, then egg, then breadcrumb mixture, pressing gently to coat.

  • Place seam-side down in prepared dish.

  • Bake for 25 minutes.

  • Spoon marinara sauce over each roll and return to oven for 5 minutes, or until internal temperature reaches 165°F.

  • Garnish with fresh parsley and serve hot.

  • Secure with toothpicks if needed to keep rolls closed.

  • For extra crispiness, lightly spray the tops with cooking spray before baking.
