These Crispy Baked Pepperoni Chicken Rolls are stuffed with melty mozzarella and savory pepperoni, then baked until golden and topped with warm marinara sauce. An easy Italian-inspired chicken dinner that’s perfect for busy weeknights and guaranteed to be a family favorite.
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
20–24 slices pepperoni
1 cup shredded Italian blend cheese (or mozzarella)
1 tablespoon fresh parsley, chopped
½ cup all-purpose flour
1 teaspoon Italian seasoning
2 large eggs
1 cup Italian-style breadcrumbs
¼ cup grated Parmesan cheese
½ cup marinara sauce
Cooking spray
Preheat oven to 450°F. Spray an 11 x 9-inch baking dish or sheet pan with cooking spray.
Set up three shallow bowls:
Bowl 1: flour and Italian seasoning
Bowl 2: whisked eggs
Bowl 3: breadcrumbs mixed with Parmesan
Place chicken breasts between plastic wrap and pound to ¼-inch thickness. Season both sides with salt and pepper.
Layer pepperoni and shredded cheese over each chicken breast. Sprinkle with parsley.
Roll up chicken tightly, tucking in sides as needed.
Dip each roll into flour, then egg, then breadcrumb mixture, pressing gently to coat.
Place seam-side down in prepared dish.
Bake for 25 minutes.
Spoon marinara sauce over each roll and return to oven for 5 minutes, or until internal temperature reaches 165°F.
Garnish with fresh parsley and serve hot.
Secure with toothpicks if needed to keep rolls closed.
For extra crispiness, lightly spray the tops with cooking spray before baking.
Mozzarella, provolone, or Italian blend cheese all work well.
