Description
This pepper mango salsa is fresh, sweet, tangy, and colorful with juicy mango, pineapple, peppers, red onion, cilantro, lime, and honey. It is perfect served with tortilla chips or spooned over grilled chicken, fish, pork, or tacos.
Ingredients

3 tablespoons lime juice

3 tablespoons honey

1 teaspoon olive oil

Dash of coarsely ground black pepper

3 medium mangoes, peeled and finely chopped

2 cups finely chopped fresh pineapple

1 large sweet red pepper, finely chopped

1 Anaheim or poblano pepper, seeded and finely chopped

1/2 cup finely chopped red onion

1/4 cup chopped fresh cilantro

Tortilla chips, for serving
Instructions

In a small bowl, whisk together the lime juice, honey, olive oil, salt, and black pepper.

In a large bowl, combine the chopped mangoes, pineapple, red pepper, Anaheim or poblano pepper, red onion, and cilantro.

Pour the dressing over the fruit mixture and toss gently until evenly coated.

Cover and refrigerate for at least 1 hour to let the flavors blend.

Use ripe but firm mangoes for the best texture.

Anaheim pepper is mild, while poblano adds a slightly deeper flavor.
