These Party Potatoes are ultra-creamy, rich, and baked until golden with melted cheddar and a buttery breadcrumb topping. This make-ahead mashed potato casserole is perfect for holidays, potlucks, and family dinners.

  • 4 cups mashed potatoes (about 810 large potatoes) or 4 cups prepared instant potatoes

  • 1 cup sour cream

  • 8 oz cream cheese, softened

  • 1 teaspoon minced chives

  • ¼ teaspoon garlic powder

  • ¼ cup dry bread crumbs

  • 1 tablespoon butter, melted

  • ½ cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F. Grease a 2-quart casserole dish.

  • In a large bowl, combine mashed potatoes, sour cream, cream cheese, chives, and garlic powder until smooth and creamy.

  • Spread the potato mixture evenly into the prepared casserole dish.

  • In a small bowl, mix bread crumbs with melted butter and sprinkle evenly over the potatoes.

  • Bake uncovered for 50–60 minutes, until heated through and lightly golden.

  • Sprinkle shredded cheddar cheese over the top and return to the oven for 5 minutes, or until melted.

  • Serve warm.

Notes

  • This casserole can be assembled up to 24 hours in advance and refrigerated before baking.

  • Let the dish sit at room temperature for 15 minutes before baking if chilled.

  • Great for doubling to feed a crowd.
