These Party Potatoes are ultra-creamy, rich, and baked until golden with melted cheddar and a buttery breadcrumb topping. This make-ahead mashed potato casserole is perfect for holidays, potlucks, and family dinners.
4 cups mashed potatoes (about 8–10 large potatoes) or 4 cups prepared instant potatoes
1 cup sour cream
8 oz cream cheese, softened
1 teaspoon minced chives
¼ teaspoon garlic powder
¼ cup dry bread crumbs
1 tablespoon butter, melted
½ cup shredded cheddar cheese
Preheat oven to 350°F. Grease a 2-quart casserole dish.
In a large bowl, combine mashed potatoes, sour cream, cream cheese, chives, and garlic powder until smooth and creamy.
Spread the potato mixture evenly into the prepared casserole dish.
In a small bowl, mix bread crumbs with melted butter and sprinkle evenly over the potatoes.
Bake uncovered for 50–60 minutes, until heated through and lightly golden.
Sprinkle shredded cheddar cheese over the top and return to the oven for 5 minutes, or until melted.
Serve warm.
This casserole can be assembled up to 24 hours in advance and refrigerated before baking.
Let the dish sit at room temperature for 15 minutes before baking if chilled.
