Description

These Oven Baked Crack Chicken Tacos are loaded with creamy ranch-seasoned chicken, crispy bacon, cream cheese, and cheddar cheese, then baked until golden and crispy. Topped with ranch dressing, green onions, and fresh tomatoes, they’re the ultimate easy weeknight dinner.


Ingredients

  • 3 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1 packet ranch seasoning mix
  • 1½ cups shredded sharp cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 12 small flour tortillas
  • 2 tablespoons melted butter

For Serving

  • Ranch dressing
  • Diced tomatoes
  • Sliced green onions
  • Extra bacon crumbles


Instructions

  • Preheat oven to 425 degrees F.
  • In a large mixing bowl, combine shredded chicken, cream cheese, ranch seasoning, cheddar cheese, bacon, garlic powder, and onion powder. Mix until fully combined.
  • Warm tortillas for 20 seconds in the microwave so they are easier to fold.
  • Spoon approximately ¼ cup of filling onto one side of each tortilla.
  • Fold tortillas in half and arrange in a lightly greased 9×13 baking dish.
  • Brush the tops and edges lightly with melted butter.
  • Bake for 12 to 15 minutes or until the tortillas are crispy and golden and the filling is hot and bubbly.
  • Remove from the oven and drizzle with ranch dressing.
  • Sprinkle with diced tomatoes, green onions, and additional bacon if desired.
  • Serve immediately.

Notes

  • Rotisserie chicken works perfectly for this recipe.
  • Pepper Jack cheese can be substituted for extra heat.
  • For extra crispy tacos, bake on a parchment-lined sheet pan instead of a baking dish.
  • Leftover filling can be refrigerated for up to 4 days.
