Description
Crispy oven-baked taquitos filled with seasoned ground beef, cream cheese, and melty shredded cheese. These baked taquitos are creamy on the inside, golden on the outside, and perfect for weeknight dinners, parties, or freezer meals. No frying required.
Ingredients

1 pound ground beef

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and black pepper, to taste

4 ounces cream cheese, softened

2 tablespoons sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

12–14 small flour or corn tortillas

Cooking spray or olive oil spray
Instructions

Preheat oven to 425°F and line a baking sheet with parchment paper.

In a large skillet over medium heat, cook the ground beef and diced onion until browned and fully cooked. Drain excess grease.

Add garlic, chili powder, cumin, paprika, salt, and pepper. Stir and cook for 30 seconds until fragrant.

Reduce heat to low and stir in the cream cheese and sour cream until smooth and creamy.

Remove from heat and fold in the shredded cheddar and Monterey Jack cheese until fully combined.

Warm tortillas until pliable. Spoon 2–3 tablespoons of filling onto one edge of each tortilla and roll tightly.

Place taquitos seam-side down on the prepared baking sheet. Lightly spray tops with cooking spray.

Bake for 15–18 minutes, flipping once halfway through, until golden brown and crispy.

Serve warm with sour cream, salsa, or guacamole.
