These orange juice glazed carrots are simmered with butter, brown sugar, fresh orange juice, orange zest, and cinnamon until tender and coated in a glossy citrus glaze. Ready in 30 minutes, they make an easy side dish for Thanksgiving, Christmas, Easter, or weeknight dinners.

  • 2 pounds fresh carrots
  • ¾ cup orange juice
  • 3 tablespoons butter
  • 2 tablespoons packed brown sugar
  • 1 teaspoon fresh orange zest
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh parsley

Instructions

  • Peel the carrots and slice them diagonally into evenly sized ¼-inch rounds.
  • Add the carrots, orange juice, butter, brown sugar, orange zest, cinnamon, and salt to a large skillet.
  • Bring the mixture to a gentle boil over medium-high heat.
  • Reduce the heat to medium-low and cover the skillet. Simmer for 8 to 10 minutes, or until the carrots are almost fork-tender.
  • Remove the lid and continue cooking uncovered for 6 to 10 minutes. Stir occasionally as the orange juice mixture reduces and coats the carrots.
  • Stir more frequently during the final few minutes to prevent the brown sugar glaze from scorching.
  • Remove the skillet from the heat once the carrots are tender and coated in a thick, glossy glaze.
  • Season with black pepper and additional salt if needed. Garnish with chopped fresh parsley and serve warm.

Notes

  • Freshly squeezed orange juice provides the brightest citrus flavor, but bottled 100% orange juice also works.
  • Cut the carrots into evenly sized pieces so they cook at the same rate.
  • If the glaze becomes too thick, stir in one or two tablespoons of orange juice or water.
  • If the carrots become tender before the glaze thickens, transfer them to a serving dish and continue simmering the glaze separately.
  • Baby carrots can be substituted, but they may require an additional five minutes of covered cooking.
  • For a more savory flavor, reduce the brown sugar to one tablespoon and add one teaspoon of fresh thyme.
  • Store leftovers in an airtight container in the refrigerator for up to four days.
