Tender steak, mushrooms, and egg noodles are simmered together in a rich, creamy Steak Diane-inspired sauce for an easy one-pan comfort food dinner that’s packed with steakhouse flavor.

Steak
- 1½ pounds sirloin steak, sliced into thin strips
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
Stroganoff
- 2 tablespoons butter
- 8 ounces baby bella mushrooms, sliced
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 2 tablespoons tomato paste
- 4 cups beef broth
- 12 ounces extra-wide egg noodles
- 1 teaspoon fresh thyme leaves
- ½ teaspoon smoked paprika
- 1 cup sour cream
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Season the steak strips with salt, pepper, and garlic powder.
- Heat olive oil in a large enamel skillet or Dutch oven over medium-high heat. Sear the steak for 2 to 3 minutes per side until browned. Remove to a plate.
- Reduce heat to medium and add butter. Stir in mushrooms and onions. Cook for 6 to 8 minutes until softened and golden.
- Add garlic and cook for 30 seconds.
- Stir in Worcestershire sauce, Dijon mustard, tomato paste, thyme, and smoked paprika.
- Pour in beef broth and scrape up any browned bits from the bottom of the pan.
- Add egg noodles. Bring to a simmer and cook uncovered for 10 to 12 minutes, stirring occasionally, until noodles are tender.
- Lower heat to low. Stir together sour cream and heavy cream, then add to the skillet.
- Return steak and juices to the pan. Stir in Parmesan cheese.
- Simmer for 2 to 3 minutes until thick, creamy, and heated through.
- Garnish with parsley and serve immediately.
