These spooky Monster Jello Shots are the ultimate Halloween party treat! Made with lime Jello, vodka, and creepy candy eyeballs, they’re easy to make ahead and guaranteed to be the hit of any Halloween celebration.

Ingredients

  • 1 (3-ounce) box lime Jello
  • 1 cup boiling water
  • ½ cup cold water
  • ½ cup vodka
  • 24 edible candy eyeballs
  • Green sanding sugar (optional, for rims)
  • Corn syrup or simple syrup (for rimming cups)
  • Whipped cream (optional garnish)

Instructions

  • Arrange twelve 2-ounce plastic shot cups on a baking sheet.
  • Pour the lime Jello powder into a large mixing bowl.
  • Add the boiling water and whisk until the gelatin is completely dissolved.
  • Stir in the cold water followed by the vodka until fully combined.
  • If desired, lightly coat the rims of each shot cup with corn syrup and dip into green sanding sugar.
  • Carefully pour the gelatin mixture into each prepared shot cup.
  • Refrigerate for about 45 minutes, or until the gelatin has slightly thickened.
  • Gently press two or three candy eyeballs into each shot so they appear to float near the top.
  • Return to the refrigerator for 3 to 4 hours, or until completely set.
  • Serve chilled. Garnish with whipped cream and extra candy eyeballs if desired.

Notes

  • Add the candy eyeballs after the jello begins to thicken so they don’t sink to the bottom.
  • Store covered in the refrigerator for up to 3 days.
  • Do not freeze.
  • For a non-alcoholic version, replace the vodka with an additional ½ cup cold water or lemon-lime soda.
  • Do not increase the alcohol beyond a 1:1 liquid ratio or the gelatin may not fully set.
