These maple banana muffins are soft, moist, and naturally sweetened with ripe bananas and pure maple syrup. Easy to make with simple pantry ingredients, they’re perfect for breakfast, brunch, or an afternoon snack.
Ingredients

3 ripe bananas, mashed

½ cup pure maple syrup

¼ cup melted butter (or neutral oil)

2 large eggs

1 teaspoon vanilla extract

1¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

½ teaspoon ground cinnamon (optional)

½ cup chopped walnuts or pecans (optional)
Instructions

Preheat oven to 350°F and line a muffin tin with liners or lightly grease.

In a large bowl, whisk together mashed bananas, maple syrup, melted butter, eggs, and vanilla until smooth.

In a separate bowl, combine flour, baking soda, baking powder, salt, and cinnamon.

Add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.

Fold in nuts if using.

Divide batter evenly between muffin cups.

Bake for 18–22 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.

Let cool in the pan for 5 minutes, then transfer to a wire rack.
