This hearty mild turkey chili is made with lean ground turkey, Italian turkey sausage, beans, vegetables, tomatoes, a splash of beer, and cozy spices. It is a thick, crowd-pleasing tailgate chili that is perfect for game day or an easy fall dinner.

  • 2 tablespoons olive oil
  • 1 pound lean ground turkey
  • 1 pound mild Italian turkey sausage, casings removed
  • 1 large yellow onion, diced
  • 2 celery stalks, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 3 tablespoons mild chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1½ teaspoons kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • 1 (15-ounce) can mild chili beans, undrained
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 2 (14.5-ounce) cans diced tomatoes, undrained
  • 1 (6-ounce) can tomato paste
  • ¾ cup light beer
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon real bacon bits, optional

Instructions

  1. Heat the olive oil in a large Dutch oven over medium-high heat. Add the ground turkey and Italian turkey sausage. Cook, breaking up the meat with a spoon, until browned and cooked through.
  2. Add the onion, celery, green bell pepper, red bell pepper, and garlic. Cook for 5 minutes, stirring often, until the vegetables begin to soften.
  3. Stir in the chili powder, cumin, smoked paprika, oregano, basil, salt, and black pepper. Cook for 1 minute.
  4. Add the chili beans, kidney beans, pinto beans, diced tomatoes, tomato paste, beer, chicken broth, Worcestershire sauce, brown sugar, and optional bacon bits. Stir well.
  5. Bring the chili to a gentle simmer. Reduce heat to low, partially cover, and simmer for 1½ to 2 hours, stirring occasionally.
  6. Taste and adjust seasoning as needed. Serve with cheddar, sour cream, green onions, and crushed corn chips.

Notes

  • This is a mild chili. Add cayenne, diced jalapeños, chipotle powder, or hot sauce for more heat.
  • The chili tastes even better after chilling overnight and reheating.
  • To make it without beer, use an additional ¾ cup chicken broth.
  • For slow cooker chili, brown the meat and vegetables first. Transfer everything to a slow cooker and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
