These colorful Kool-Aid pickles, also called Koolickles, are sweet, sour, fruity, and crunchy. This easy Southern snack requires only four ingredients and a few days in the refrigerator.

Ingredients

Scale
  • 1 (32-ounce) jar whole dill pickles, pickle spears, or pickle chips
  • 2 packets unsweetened Kool-Aid drink mix, any flavor
  • to 2 cups granulated sugar
  • Reserved pickle brine from the jar

Instructions

  1. Pour the pickle brine from the jar into a large measuring cup or mixing bowl. Do not discard it.
  2. If using whole dill pickles, cut them lengthwise into spears or slice them into thick rounds.
  3. Return the cut pickles to the original jar or place them in a clean, lidded glass container.
  4. Add the unsweetened Kool-Aid packets and granulated sugar to the reserved pickle brine.
  5. Whisk until the Kool-Aid and most of the sugar have dissolved.
  6. Carefully pour the Kool-Aid brine over the cut pickles, making sure they are completely covered. Discard any extra brine that does not fit in the jar.
  7. Secure the lid tightly and gently turn the jar several times to distribute the mixture.
  8. Refrigerate the Kool-Aid pickles for at least 3 days. For stronger fruit flavor and deeper color, let them soak for 5 to 7 days.
  9. Turn or gently shake the sealed jar once a day to redistribute the brine.
  10. Serve the Kool-Aid pickles cold. Keep them covered and refrigerated.

Notes

  • Use 1½ cups of sugar for a tangier pickle or 2 cups for a sweeter, more traditional Koolickle.
  • Cherry and tropical punch are two of the most popular Kool-Aid flavors for this recipe.
  • Pickle chips and spears absorb the flavored brine faster than whole pickles.
  • Kool-Aid can stain clothing, wooden utensils, and porous countertops.
  • These are refrigerator pickles and are not shelf-stable. Do not store them at room temperature or use this recipe for home canning.
  • Always use a clean utensil to remove pickles from the jar.
  • For the best flavor and texture, enjoy the pickles within 2 to 4 weeks.
