This Kale and Carrot Caesar Salad is a fresh twist on the classic Caesar. Tender kale is tossed with shaved carrots, creamy homemade Caesar dressing, crunchy croutons, and lots of fresh Parmesan cheese for a vibrant, flavorful salad.

Ingredients

1 large bunch kale, stems removed and chopped
1 cup shaved carrots
1 cup croutons (lightly crushed)
½ cup freshly grated Parmesan cheese

Creamy Caesar Dressing

½ cup mayonnaise
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
2 cloves garlic, minced
¼ cup finely grated Parmesan cheese
2 tablespoons olive oil
2–3 tablespoons water (to thin)
Salt and black pepper to taste

Instructions

  1. Prepare the kale
    Wash and dry the kale thoroughly. Remove the stems and chop the leaves into bite-sized pieces.

  2. Massage the kale
    Place the kale in a large bowl and gently massage it for about 1 minute to soften the leaves.

  3. Make the Caesar dressing
    In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, garlic, Parmesan cheese, and olive oil. Add a little water to thin if needed. Season with salt and pepper.

  4. Toss the salad
    Add the shaved carrots and dressing to the kale. Toss until the kale is evenly coated.

  5. Finish the salad
    Top with freshly grated Parmesan and crushed croutons.

  6. Serve
    Serve immediately while the croutons stay crunchy.

Notes

Massaging the kale helps soften the leaves and removes bitterness, making the salad more tender and flavorful.

You can add grilled chicken, shrimp, or salmon to turn this salad into a full meal.
