Description

This Italian pulled pork is slow-cooked until tender with peppers, onions, tomatoes, and bold Italian spices. Juicy, flavorful, and perfect for sandwiches, pasta, or easy weeknight dinners.


Ingredients

  • 3 lb pork roast (shoulder or butt)
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 1 teaspoon fennel seeds
  • 1 tablespoon Italian seasoning
  • 1 tablespoon steak seasoning
  • ½ teaspoon red pepper flakes (or to taste)
  • Salt and black pepper, to taste


Instructions

  1. Add sliced onions and peppers to the bottom of the slow cooker.
  2. Pat the pork roast dry and season all sides with salt, pepper, steak seasoning, Italian seasoning, fennel, fennel seeds, and red pepper flakes.
  3. Place the pork roast on top of the vegetables.
  4. Pour the diced tomatoes (with juices) over the pork.
  5. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the pork is fork-tender.
  6. Remove the pork and shred with two forks.
  7. Return shredded pork to the slow cooker and mix well with the peppers, onions, and sauce.
  8. Let sit for 10–15 minutes to absorb flavor before serving.

Notes

  • Pork shoulder or pork butt gives the most tender results
  • Add extra red pepper flakes for more heat
  • Great for meal prep and freezer-friendly
  • Delicious served on hoagie rolls, over pasta, or with mashed potatoes
