Description
This Italian pulled pork is slow-cooked until tender with peppers, onions, tomatoes, and bold Italian spices. Juicy, flavorful, and perfect for sandwiches, pasta, or easy weeknight dinners.

- 3 lb pork roast (shoulder or butt)
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 (14.5 oz) can diced tomatoes (with juices)
- 1 teaspoon fennel seeds
- 1 tablespoon Italian seasoning
- 1 tablespoon steak seasoning
- ½ teaspoon red pepper flakes (or to taste)
- Salt and black pepper, to taste
Instructions
- Add sliced onions and peppers to the bottom of the slow cooker.
- Pat the pork roast dry and season all sides with salt, pepper, steak seasoning, Italian seasoning, fennel, fennel seeds, and red pepper flakes.
- Place the pork roast on top of the vegetables.
- Pour the diced tomatoes (with juices) over the pork.
- Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the pork is fork-tender.
- Remove the pork and shred with two forks.
- Return shredded pork to the slow cooker and mix well with the peppers, onions, and sauce.
- Let sit for 10–15 minutes to absorb flavor before serving.
Notes
- Pork shoulder or pork butt gives the most tender results
- Add extra red pepper flakes for more heat
- Great for meal prep and freezer-friendly
- Delicious served on hoagie rolls, over pasta, or with mashed potatoes
