Description

This fresh rhubarb salsa is the perfect balance of sweet and tangy, made with strawberries, jalapeño, lime, and herbs. It’s a bright, flavorful spring recipe that pairs perfectly with tacos, grilled chicken, pork, or chips.


Ingredients

  • 2 cups fresh rhubarb, finely diced
  • 1/2 cup strawberries, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons honey (adjust to taste)
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 teaspoon salt (or to taste)
  • Optional: 1/2 teaspoon grated fresh ginger


Instructions

  1. Finely dice the rhubarb into small, even pieces and place in a mixing bowl.
  2. Add diced strawberries, red onion, and jalapeño.
  3. Pour in honey and fresh lime juice.
  4. Add chopped cilantro and salt.
  5. Stir everything together until well combined.
  6. Let the salsa sit for 10–15 minutes to allow flavors to meld and slightly soften the rhubarb.
  7. Taste and adjust sweetness or lime juice as needed.
  8. Serve fresh with tacos, grilled meats, or chips.

Notes

  • If your rhubarb is very tart, add a little more honey.
  • Letting it sit helps mellow the sharpness of the rhubarb.
  • Best served fresh, but can be refrigerated up to 3 days.
  • Dice ingredients small for the best texture and scoopability.
