½ cup (1 stick) unsalted butter
Instructions

Place the butter in a light-colored stainless steel skillet or saucepan over medium heat.

Allow the butter to melt completely.

As it cooks, the butter will begin to foam and bubble while the water evaporates.

Continue cooking, swirling the pan occasionally, until golden brown specks form on the bottom of the pan.

The butter will smell warm and nutty when it’s ready.

Immediately remove from heat and pour into a bowl to stop the cooking.

Watch carefully near the end—brown butter can burn quickly.

Using a light colored pan makes it easier to see the milk solids browning.

For easy storage, pour the brown butter onto parchment paper, roll into a log, and refrigerate until firm.
