Description

Sweet, caramelized honey roasted carrots served over creamy whipped feta. This easy and elegant side dish is perfect for Easter, spring dinners, and holiday meals.


Ingredients

For the carrots:

  • 2 pounds carrots, peeled and trimmed

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

For the whipped feta:

  • 8 ounces feta cheese

  • 1/2 cup plain Greek yogurt

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

Optional toppings:

  • chopped fresh parsley

  • drizzle of honey

  • cracked black pepper

  • chopped pistachios or walnuts


Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.

  • Add carrots to a bowl and toss with olive oil, honey, salt, and pepper until evenly coated.

  • Spread carrots on the baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.

  • While carrots are roasting, add feta, Greek yogurt, olive oil, and lemon juice to a food processor. Blend until smooth and creamy.

  • Spread whipped feta onto a serving platter.

  • Arrange warm roasted carrots over the feta.

  • Finish with chopped parsley, a drizzle of honey, and cracked black pepper. Serve warm or at room temperature.

Notes

  • Slice thicker carrots lengthwise for even roasting

  • Do not overcrowd the pan for best caramelization

  • Whipped feta can be made up to 2 days ahead

  • Great served warm or at room temperature
