Description
Sweet, caramelized honey roasted carrots served over creamy whipped feta. This easy and elegant side dish is perfect for Easter, spring dinners, and holiday meals.
Ingredients
For the carrots:

2 pounds carrots, peeled and trimmed

2 tablespoons olive oil

2 tablespoons honey

1/2 teaspoon salt

1/4 teaspoon black pepper
For the whipped feta:

8 ounces feta cheese
-
1/2 cup plain Greek yogurt

1 tablespoon olive oil
-
1 tablespoon lemon juice
Optional toppings:

chopped fresh parsley
-
drizzle of honey
-
cracked black pepper
-
chopped pistachios or walnuts
Instructions

Preheat oven to 425°F. Line a baking sheet with parchment paper.

Add carrots to a bowl and toss with olive oil, honey, salt, and pepper until evenly coated.

Spread carrots on the baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.

While carrots are roasting, add feta, Greek yogurt, olive oil, and lemon juice to a food processor. Blend until smooth and creamy.

Spread whipped feta onto a serving platter.

Arrange warm roasted carrots over the feta.

Finish with chopped parsley, a drizzle of honey, and cracked black pepper. Serve warm or at room temperature.

Slice thicker carrots lengthwise for even roasting
