Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, diced

1 jalapeño, thinly sliced

2 tablespoons olive oil

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon apple cider vinegar

Salt and black pepper, to taste

Fresh cilantro, chopped (for garnish)
Instructions

Preheat grill to medium-high heat and lightly oil the grates.

In a small bowl, whisk together honey, soy sauce, garlic, and apple cider vinegar. Set aside.

Season chicken breasts with salt and pepper, then brush both sides with olive oil.

Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F.

While chicken grills, heat a skillet over medium heat. Add peaches and jalapeño.

Pour in the honey mixture and cook for about 5 minutes, stirring, until slightly thickened.

Brush chicken with the peach-jalapeño glaze and grill an additional 1–2 minutes per side to caramelize.

Serve topped with remaining peach mixture and garnish with fresh cilantro.
Notes

For less heat, remove seeds from the jalapeño.

Chicken thighs may be substituted for extra juiciness.
