Description

This easy Honey Balsamic Chicken and Peppers is a quick one-skillet dinner made with juicy chicken, sweet bell peppers, and a rich honey balsamic glaze. Ready in under 30 minutes, it’s perfect served over rice, pasta, or mashed potatoes for a simple weeknight meal.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 3 bell peppers (red, yellow, green), chopped

  • 1 small red onion, chopped

  • 2 cloves garlic, minced

  • ½ cup honey

  • ½ cup balsamic vinegar

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Fresh basil or parsley (optional, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium-high heat.

  • Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 6–8 minutes. Remove from skillet and set aside.

  • In the same skillet, add chopped bell peppers and red onion. Sauté for 4–5 minutes until slightly softened.

  • Stir in the minced garlic and cook for 30 seconds until fragrant.

  • Pour in the honey and balsamic vinegar. Stir to combine and bring to a gentle simmer.

  • Return the chicken to the skillet and cook for another 5–7 minutes, allowing the sauce to thicken and coat the chicken and vegetables.

  • Garnish with fresh basil or parsley and serve immediately over pasta, rice, or mashed potatoes.

Notes

  • For extra flavor, add a splash of soy sauce or a pinch of red pepper flakes.

  • Chicken thighs can be used instead of breasts for a juicier option.

  • Sauce will thicken as it cools — let it simmer until glossy and slightly reduced.

  • Great for meal prep and reheats well.
