Creamy ground beef stroganoff with mushrooms served over fluffy mashed potatoes for the ultimate cozy comfort food bowl. This easy 30-minute dinner is budget-friendly, hearty, and perfect for busy weeknights.


Ingredients

Mashed Potatoes

4 cups mashed potatoes
2 tablespoons butter
½ cup milk or cream
salt and pepper to taste

Ground Beef Stroganoff

1 lb ground beef
1 small onion, diced
8 oz mushrooms, sliced
3 cloves garlic, minced
2 tablespoons butter
2 tablespoons flour
2 cups beef broth
1 tablespoon Worcestershire sauce
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
½ cup sour cream

Optional: chopped parsley for garnish


Instructions

  1. Cook the mashed potatoes if not already prepared. Keep warm.

  2. In a large skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease if needed.

  3. Add the sliced mushrooms and garlic and cook for about 3–4 minutes until softened.

  4. Push the beef mixture to the side of the pan. Melt the butter in the empty space and whisk in the flour to form a roux.

  5. Slowly pour in the beef broth while stirring until the sauce begins to thicken.

  6. Stir in Worcestershire sauce, paprika, salt, and pepper. Simmer for about 5 minutes until creamy.

  7. Reduce heat to low and stir in sour cream until smooth.

  8. Spoon mashed potatoes into bowls and top with the creamy ground beef stroganoff mixture.

  9. Garnish with parsley and fresh cracked pepper if desired.

Notes

Use leftover mashed potatoes for a quick shortcut.
Add extra mushrooms for deeper flavor.
Do not boil the sauce after adding sour cream to prevent curdling.
