Tender, juicy, and bursting with fresh citrus flavor, this Grilled Lemon Dijon Chicken is one of those recipes you’ll make all summer long. Chicken breasts are marinated in a simple blend of fresh lemon juice, Dijon mustard, garlic, olive oil, shallots, and herbs before being grilled to perfection. It’s perfect for backyard BBQs, easy weeknight dinners, meal prep, or slicing over salads.
If needed, pound the chicken breasts to an even thickness so they cook evenly.
In a large glass bowl, whisk together:
Add the chicken breasts to the bowl and turn to coat well.
Cover and refrigerate for at least 2 hours, preferably 6–12 hours, or overnight.
Heat your grill to medium-high heat (about 400–425°F).
Lightly oil the grates.
Remove the chicken from the marinade and discard the remaining marinade.
Grill for 6–7 minutes per side, depending on thickness.
Cook until the internal temperature reaches 165°F.
Transfer the chicken to a platter and let rest for 5–10 minutes before slicing.
Garnish with fresh parsley or basil and grilled lemon halves.
Serve immediately.
