Ingredients
Scale
- 2 pounds boneless, skinless chicken breasts
- 1 cup Catalina dressing
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Fresh parsley, chopped (optional garnish)
Instructions
- Pound the chicken breasts to an even thickness using a meat mallet.
- In a large bowl or zip-top bag, whisk together the Catalina dressing, Worcestershire sauce, olive oil, brown sugar, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
- Add the chicken to the marinade and turn to coat completely. Cover and refrigerate for at least 2 hours or overnight for the best flavor.
- Preheat your grill to medium-high heat (about 400°F). Clean and lightly oil the grill grates.
- Remove the chicken from the marinade, allowing the excess to drip off. Discard the used marinade.
- Grill the chicken for 5–7 minutes per side, depending on thickness, until nicely charred and the internal temperature reaches 165°F.
- Transfer the chicken to a platter and let it rest for 5 minutes before slicing.
- Garnish with fresh parsley if desired and serve immediately.
Notes
- Marinating overnight gives the chicken the best flavor and tenderness.
- Chicken thighs can be substituted for chicken breasts.
- Do not reuse leftover marinade after the raw chicken has been in it.
- Let the chicken rest before slicing to keep it juicy.
- Use an instant-read thermometer to avoid overcooking.
