Description

This Grilled Catalina Dressing Chicken is incredibly juicy, tender, and packed with sweet, tangy flavor. Catalina dressing creates an easy marinade that caramelizes beautifully on the grill, making this a simple summer dinner that’s perfect for backyard BBQs, meal prep, and busy weeknights.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Catalina dressing
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. In a large bowl or zip-top bag, whisk together the Catalina dressing, Worcestershire sauce, olive oil, brown sugar, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
  3. Add the chicken to the marinade and turn to coat completely. Cover and refrigerate for at least 2 hours or overnight for the best flavor.
  4. Preheat your grill to medium-high heat (about 400°F). Clean and lightly oil the grill grates.
  5. Remove the chicken from the marinade, allowing the excess to drip off. Discard the used marinade.
  6. Grill the chicken for 5–7 minutes per side, depending on thickness, until nicely charred and the internal temperature reaches 165°F.
  7. Transfer the chicken to a platter and let it rest for 5 minutes before slicing.
  8. Garnish with fresh parsley if desired and serve immediately.

Notes

  • Marinating overnight gives the chicken the best flavor and tenderness.
  • Chicken thighs can be substituted for chicken breasts.
  • Do not reuse leftover marinade after the raw chicken has been in it.
  • Let the chicken rest before slicing to keep it juicy.
  • Use an instant-read thermometer to avoid overcooking.
