Description
Fresh shredded carrots tossed with dried cranberries, herbs, and creamy green goddess dressing. This bright, crunchy carrot slaw is an easy side dish perfect for BBQs, sandwiches, and everyday meals.
Ingredients
4 cups shredded carrots
½ cup thinly sliced red onion
⅓ cup dried Craisins (dried cranberries)
¼ cup chopped parsley
2 tablespoons chopped chives
Green Goddess Dressing
½ cup mayonnaise
¼ cup Greek yogurt or sour cream
1 clove garlic
2 tablespoons lemon juice
¼ cup fresh parsley
2 tablespoons fresh chives
1 tablespoon fresh dill
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
Instructions

Place the shredded carrots in a large mixing bowl.

Add the sliced red onion, dried Craisins, parsley, and chives.

In a blender or food processor combine mayonnaise, Greek yogurt, garlic, lemon juice, parsley, chives, dill, olive oil, salt, and pepper.

Blend until smooth and creamy.

Pour the green goddess dressing over the carrot mixture.

Toss well until the slaw is evenly coated with dressing.

Chill for 15–30 minutes before serving for the best flavor.
Notes
Freshly shredded carrots work best and give the slaw a sweeter flavor and better texture than pre-shredded carrots.
You can add sliced almonds or sunflower seeds for extra crunch if desired.
This carrot slaw can be made up to 24 hours in advance and stored in the refrigerator.
