This Greek grilled chicken salad is packed with juicy grilled chicken, crisp cucumbers, tomatoes, red onion, Kalamata olives, and crumbled feta tossed in a homemade lemon oregano dressing. A healthy Mediterranean dinner recipe that’s high protein, fresh, and perfect for summer meals or meal prep.

For the Chicken:

  • 1 lb boneless skinless chicken breasts

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • 1 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

For the Salad:

  • 2 cups chopped cucumber

  • 1 1/2 cups cherry tomatoes, halved

  • 1/2 red onion, diced

  • 1/2 cup Kalamata olives

  • 1/23/4 cup crumbled feta cheese

For the Dressing:

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar or lemon juice

  • 1 teaspoon dried oregano

  • Salt and black pepper to taste

Instructions

  • Preheat grill to medium-high heat.

  • In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Coat the chicken evenly.

  • Grill chicken 5–7 minutes per side or until internal temperature reaches 165°F. Remove and let rest before slicing.

  • In a large bowl, combine cucumber, tomatoes, red onion, olives, and feta.

  • Whisk together dressing ingredients.

  • Add sliced grilled chicken to the salad. Pour dressing over and toss gently to combine.

 

  • Serve immediately and enjoy!

Notes

  • Marinate chicken for 30 minutes to overnight for deeper flavor.

  • Store dressing separately if making ahead.

 

  • Great served with warm pita bread or over romaine lettuce for extra crunch.
