Description

This easy garlic cottage cheese bread is soft, savory, and packed with protein. Made with simple pantry ingredients, this moist homemade loaf has a golden crust and fluffy interior with delicious garlic flavor. Perfect served with pasta, soups, salads, or toasted with butter.


Ingredients

1 cup cottage cheese
2 eggs
2 tablespoons olive oil or melted butter
1½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon garlic powder
2 cloves garlic, minced
2 tablespoons chopped parsley (for topping)
½ cup shredded mozzarella or parmesan cheese (optional)


Instructions

  • Preheat oven to 350°F and grease or line a loaf pan with parchment paper.

  • Blend the cottage cheese in a blender or food processor until smooth for a better bread texture.

  • Mix wet ingredients. In a mixing bowl combine blended cottage cheese, eggs, and olive oil or melted butter. Whisk until smooth.

  • Add dry ingredients. Stir in flour, baking powder, salt, and garlic powder until just combined.

  • Add flavor. Fold in minced garlic and shredded cheese if using.

  • Transfer batter. Pour the batter into the prepared loaf pan and smooth the top.

  • Bake for 40–45 minutes or until the bread is golden and a toothpick inserted into the center comes out clean.

  • Finish and cool. Sprinkle chopped parsley over the top after baking and allow the bread to cool slightly before slicing.

Notes

For extra garlic flavor, brush the warm bread with melted butter mixed with a pinch of garlic powder.
