Description

This Fresh Herb Fettuccine Alfredo is rich, creamy, and finished with basil, parsley, and chives for a bright, flavorful twist on the classic. Made with simple ingredients, this easy homemade Alfredo pasta is perfect for weeknight dinners or cozy entertaining.


Ingredients

Scale
  • 1 1/2 cups heavy cream
  • 5 Tablespoons unsalted butter
  • 1 cup grated Parmesan
  • 1/2 teaspoon grated nutmeg
  • 1 Tablespoon each fresh chopped basil, chives, and parsley
  • 1 lb. Fettuccine pasta
  • salt and pepper, to taste


Instructions

  1. In a large pot, bring water to a boil and season with salt. Cook fettuccine as per package instructions until aldente. Drain and set aside.
  2. In a sauce pan, bring cream and butter to a boil, and than lower heat to simmer. Add in 3/4 cup parmesan cheese, and stir until smooth. Remove from heat and add in chopped fresh herbs, nutmeg and salt and pepper to taste.
  3. Pour the alfredo over the pasta and toss everything together. Top the pasta with the remaining parmesan cheese and toss once more until everything is combined. Serve immediately.

Notes

  • Use freshly grated Parmesan for the smoothest, creamiest sauce.

  • Keep the heat low once the cheese is added to prevent separating.

  • Add a splash of reserved pasta water if the sauce thickens too much.

  • Fresh herbs should be stirred in off heat to keep their color and flavor.

  • For a protein option, serve with grilled chicken, shrimp, or salmon.
