These French Onion Ground Beef Mashed Potato Bowls are an easy comfort food dinner made with ground beef, Lipton onion soup mix, peas and carrots, and creamy mashed potatoes. Finished with melted cheese, this hearty bowl meal is perfect for busy weeknights.
Ingredients
Mashed Potatoes
2 pounds russet or Yukon gold potatoes, peeled and cubed
4 tablespoons butter
½ cup milk or cream
½ teaspoon salt
¼ teaspoon black pepper
French Onion Ground Beef
1 pound ground beef
1 packet Lipton onion soup mix
2 cups beef broth
1 cup water
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
½ teaspoon black pepper
Vegetables
1 bag (12 oz) frozen peas and carrots
Bowl Topping
1 cup shredded Swiss, mozzarella, or Gruyère cheese
Fresh parsley for garnish (optional)
Instructions

Cook the potatoes
Bring a large pot of salted water to a boil. Add cubed potatoes and cook 12–15 minutes until fork tender. Drain and mash with butter, milk, salt, and pepper until creamy. Keep warm. -
Brown the ground beef
In a large skillet over medium heat cook the ground beef until browned and crumbled. Drain excess grease. -
Make the onion gravy
Add the Lipton onion soup mix to the beef along with beef broth, water, Worcestershire sauce, garlic powder, and pepper. Stir well and bring to a simmer. -
Add the vegetables
Stir in the frozen peas and carrots. Simmer for 5–7 minutes until the vegetables are heated through and the gravy thickens slightly. -
Assemble the bowls
Spoon mashed potatoes into bowls. Top with the French onion ground beef mixture. -
Add cheese
Sprinkle shredded cheese over the top. -
Melt the cheese
Place bowls under the broiler for 1–2 minutes until the cheese melts and becomes bubbly. -
Serve
Garnish with parsley if desired and serve hot.

Lipton onion soup mix creates a deep savory flavor without needing to caramelize onions.
