These French Onion Chicken Mashed Potato Bowls are the ultimate comfort food dinner. Creamy mashed potatoes topped with sliced chicken, rich caramelized onion gravy, melted cheese, and green beans for a hearty, cozy one-bowl meal.
Ingredients
Mashed Potatoes
2 pounds russet or Yukon gold potatoes, peeled and cubed
4 tablespoons butter
½ cup milk or cream
½ teaspoon salt
¼ teaspoon black pepper
Chicken
2 large chicken breasts
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
French Onion Gravy
2 large yellow onions, thinly sliced
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon flour
1½ cups beef broth
1 teaspoon Worcestershire sauce
½ teaspoon dried thyme
Bowl Additions
2 cups green beans, steamed
1 cup shredded mozzarella, Swiss, or Gruyère cheese
Fresh parsley for garnish (optional)
Instructions

Cook the potatoes
Bring a pot of salted water to a boil. Add cubed potatoes and cook for 12–15 minutes until fork tender. Drain and mash with butter, milk, salt, and pepper until smooth. Keep warm. -
Cook the chicken
Season chicken with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat and cook chicken 5–6 minutes per side until golden and cooked through. Remove from skillet and slice. -
Caramelize the onions
In the same skillet melt butter over medium heat. Add sliced onions and cook slowly for 15–20 minutes, stirring occasionally, until deep golden and caramelized. Add garlic and cook 1 minute. -
Make the onion gravy
Sprinkle flour over the onions and stir well. Slowly pour in beef broth while stirring. Add Worcestershire sauce and thyme. Simmer 3–4 minutes until thickened. -
Assemble the bowls
Spoon mashed potatoes into bowls. Add green beans, then sliced chicken on top. Ladle the caramelized onion gravy over the chicken and sprinkle with cheese. -
Melt the cheese
Place bowls under the broiler for 1–2 minutes until the cheese melts and becomes bubbly. -
Serve
Finish with chopped parsley if desired and serve hot.
