Soft almond cake layered with strawberry jam and coated in a smooth white chocolate glaze. These bakery-style strawberry almond petits fours are elegant, easy to make, and perfect for showers, holidays, and special occasions.
¾ cup unsalted butter, softened
2 (8-ounce) cans almond paste
1½ cups granulated sugar
8 large eggs
1½ cups all-purpose flour
1 (10-ounce) jar strawberry jam or strawberry fruit spread
12 ounces white chocolate, finely chopped
½ cup heavy cream
2–3 tablespoons strawberry jam
Freeze-dried strawberries, crushed

Prepare the pans
Preheat oven to 400°F. Grease and flour two 15×10-inch jelly roll pans and line with wax or parchment paper.
Make the batter
Beat butter and almond paste until smooth. Gradually add sugar, mixing well. Add eggs one at a time, beating after each addition. Stir in flour just until combined.
Bake
Spread batter evenly into prepared pans. Bake 8–10 minutes or until lightly golden and a toothpick inserted comes out clean. Cool completely.
Assemble layers
Invert one cake layer onto a lightly floured surface. Spread strawberry jam evenly over the top. Place second cake layer on top and gently press.
Cut petit fours
Use a 1½-inch round cutter to cut out cakes. Place cakes on a wire rack over a parchment-lined baking sheet.
Make glaze
Heat heavy cream until just steaming. Pour over white chocolate and let sit 1 minute. Stir until smooth, then stir in strawberry jam.
Glaze
Spoon or pour glaze over each cake, covering tops and sides. Chill 30 minutes until set.
Garnish and serve
Top with freeze-dried strawberries or slivered almonds if desired. Serve at room temperature.
