Easy Shepherd’s Pie Recipe with Ground Beef

Description

This easy shepherd’s pie recipe is a classic comfort food dinner made with seasoned ground beef, mixed vegetables, rich gravy, and creamy mashed potatoes baked until golden brown. Perfect for weeknight meals or family gatherings.


Ingredients

 

  • 2 lbs potatoes

  • 2 tbsp sour cream

  • 1 large egg

  • ½ cup cream

  • Salt and pepper

  • Shredded sharp cheddar cheese (optional)

  • For the Meat Filling:
  • 1 tbsp olive oil

  • 2 lbs ground beef or ground turkey

  • 5 large carrots, peeled and chopped

  • 1 medium yellow onion, chopped

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup beef stock

  • 4 tsp Worcestershire sauce

  • 1 cup ketchup

  • 2 cups frozen peas

  • 2 cups frozen corn

  • 2 cups sliced mushrooms

  • Salt, pepper and paprika (optional)


Instructions

1. Boil and Mash Potatoes

Peel and boil the potatoes in salted water until fork-tender (about 10–12 minutes). Drain and mash with sour cream, egg, and cream until creamy. Set aside.

2. Cook the Meat and Veggies

Heat olive oil in a large skillet. Add ground meat, season with salt and pepper, and brown for about 5 minutes. Add carrots and onions and cook a few more minutes.

3. Make the Gravy

In a separate pan, melt butter and whisk in flour until combined. Slowly whisk in beef stock, Worcestershire sauce and ketchup until smooth.

4. Combine Fillings

Add frozen peas, corn, and mushrooms to the meat mixture. Stir in the sauce and mix well.

5. Assemble and Bake

 

Transfer the savory filling to a baking dish. Spread mashed potatoes evenly on top, sprinkle with shredded cheddar and a dash of paprika if desired. Broil until bubbly and golden brown.

Notes

• You can substitute ground turkey for a lighter version.
• Add shredded cheddar cheese on top for a golden, bubbly finish.
• This recipe can be assembled ahead and refrigerated before baking.
