Description

This easy crockpot honey lemon chicken with garlic and rosemary is tender, juicy, and packed with bright citrus flavor. Made with simple ingredients and cooked low and slow with potatoes, it’s the perfect cozy slow cooker dinner for busy weeknights or relaxed weekends.


Ingredients

  • 3 pounds bone-in, skin-on chicken thighs and drumsticks

  • pounds baby potatoes, halved or quartered

  • 2 lemons, divided

  • 2 tablespoons butter, melted

  • 2 tablespoons honey

  • 3 cloves garlic, minced

  • 2 sprigs fresh rosemary, leaves removed

  • 1 teaspoon coarse salt

  • ½ teaspoon black pepper


Instructions

  1. Zest and juice one lemon. Slice the remaining lemon into thin rounds.

  2. In a small bowl, whisk together lemon zest, lemon juice, melted butter, honey, garlic, rosemary, salt, and pepper.

  3. Place potatoes in the bottom of the slow cooker.

  4. Arrange chicken on top of the potatoes, skin-side up. Scatter lemon slices over the chicken.

  5. Pour the honey lemon mixture evenly over the chicken and potatoes.

  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken reaches 165°F and potatoes are tender.

  7. Optional: For crispy skin, transfer chicken to a baking sheet and broil for 3–5 minutes before serving.

Notes

  • Boneless chicken thighs may be used; reduce cook time by about 1 hour.

  • Yukon gold or red potatoes hold their shape best in the slow cooker.

  • For extra sauce, add ¼ cup chicken broth at the start of cooking.

  • Fresh thyme can be substituted for rosemary if preferred.
