This creamy ground beef and rice skillet is a rich, one-pan comfort meal made with cream cheese, Lipton onion soup mix, and diced tomatoes. Easy, budget-friendly, and ready in about 30 minutes—perfect for busy weeknights.


Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup long grain white rice (uncooked)

  • 2 cups beef broth

  • 1 cup milk

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 packet Lipton onion soup mix

  • 4 oz cream cheese, cubed

  • 1 cup shredded cheddar cheese

  • 1 tablespoon butter

  • ½ teaspoon black pepper

  • ½ teaspoon paprika


Instructions

  1. In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease.

  2. Stir in minced garlic and cook for 30 seconds until fragrant.

  3. Add rice, beef broth, milk, cream of mushroom soup, diced tomatoes, and onion soup mix. Stir well.

  4. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, until rice is tender.

  5. Stir in cream cheese, butter, and shredded cheddar until melted and creamy.

  6. Taste, adjust seasoning if needed, and serve warm.

Notes

  • Cut cream cheese into cubes for smoother melting

  • Add a splash of broth or milk if mixture thickens too much

  • Fire-roasted tomatoes add extra flavor

  • Stir once or twice during simmering to prevent sticking
