Description

Smoky, buttery chipotle garlic herb shrimp made in one cast-iron skillet and ready in just 15 minutes. Juicy shrimp are cooked with garlic herb butter, chipotle peppers, white wine, and lemon for a bold, restaurant-style dinner that’s perfect over rice, pasta, or with crusty bread.


Ingredients

  • 3 rounds garlic & herb butter spread

  • 2 chipotle peppers in adobo, finely chopped

  • 1 pound raw shrimp (2125 count), peeled and deveined

  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

  • ½ cup white wine

  • 2 tablespoons fresh lemon juice

  • 3 tablespoons sliced green onions


Instructions

  • In a large cast-iron skillet, melt the garlic herb butter over medium heat.

  • Add the chopped chipotle peppers and cook for 1 minute, stirring frequently.

  • Add the shrimp, salt, and black pepper. Cook for about 5 minutes, stirring occasionally, until shrimp are pink and opaque.

  • Using a slotted spoon, transfer shrimp to a bowl and cover to keep warm.

  • In the same skillet, add the white wine and lemon juice. Cook for 3 minutes, scraping up browned bits from the pan.

  • Remove from heat. Return shrimp to skillet, add green onions, and toss to coat in the sauce. Serve immediately.

Notes

  • For less heat, use just one chipotle pepper or scrape out the seeds before chopping.

  • Don’t overcook the shrimp—remove them as soon as they turn pink and opaque to keep them juicy.

  • This shrimp is delicious served over white rice, jasmine rice, pasta, or with crusty bread.

  • A dry white wine like Sauvignon Blanc or Pinot Grigio works best in this recipe.

  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
