Description

Juicy pork chops marinated in a bold Caribbean rum marinade with lime, garlic, ginger, and warm spices, then grilled and finished with a light drizzle of sauce. Served with caramelized grilled pineapple for an easy, flavor-packed dinner.


Ingredients

For the Marinade

  • ⅓ cup dark or spiced rum

  • ¼ cup fresh lime juice

  • 2 tablespoons lime zest

  • ¼ cup brown sugar

  • 1 tablespoon Dijon mustard

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • ½ teaspoon ground cloves

  • ½ teaspoon kosher salt

  • ½ teaspoon black pepper

  • ½ teaspoon chili pepper (optional)

  • 1 tablespoon olive oil

For the Pork Chops

  • 4 pork chops (bone-in or boneless, 1 inches thick)

For Serving

  • Grilled pineapple slices

  • Fresh cilantro (optional)

  • Lime wedges


Instructions

  • In a bowl, whisk together all marinade ingredients until smooth.

  • Place pork chops in a zip-top bag and pour marinade over them. Seal and refrigerate for 2–12 hours.

  • Preheat grill to medium-high heat.

  • Remove pork chops from marinade and discard excess.

  • Grill pork chops for 4–5 minutes per side, until internal temperature reaches 145°F.

  • Grill pineapple slices until caramelized.

  • Rest pork chops for 5 minutes, then lightly drizzle with reserved sauce (boiled separately if using).

  • Serve with grilled pineapple and lime wedges.

Notes

  • Do not marinate longer than 24 hours

  • Sauce should be lightly drizzled, not heavily coated

  • Works well with chicken or pork tenderloin

  • For less heat, omit chili pepper
