Description

This creamy blue cheese beef stroganoff is an easy 30-minute comfort food dinner made with tender strips of steak, mushrooms, and egg noodles in a rich savory sauce.


Ingredients

  • 1 ½ lbs top sirloin steak, cut into thin strips
    3 shallots, thinly sliced
    8 oz button mushrooms, quartered
    12 oz egg noodles
    5 oz crumbled blue cheese
    1 cup sour cream
    1 tablespoon Dijon mustard
    ¼ cup heavy cream or milk
    6 tablespoons butter, divided
    1 tablespoon fresh tarragon (or 1 tsp dried)
    ½ teaspoon smoked paprika
    Salt and pepper to taste


Instructions

  1. 1. Cook the noodles

    Bring a pot of salted water to a boil and cook egg noodles according to package directions. Drain and set aside.

    2. Sear the beef

    Heat a large skillet over medium-high heat and melt 3 tablespoons butter. Season the steak with salt and pepper and sear quickly until browned.

    3. Cook the shallots

    Add sliced shallots to the skillet and cook until softened and lightly caramelized. Transfer beef and shallots to a bowl and set aside.

    4. Cook the mushrooms

    Add remaining butter to the skillet and sauté mushrooms until golden and tender.

    5. Make the sauce

    Return the beef and shallots to the skillet. Add blue cheese, Dijon mustard, smoked paprika, tarragon, and cream. Stir until the cheese melts and the sauce becomes creamy.

    6. Finish the stroganoff

    Reduce heat to low and stir in sour cream. Add cooked egg noodles and toss until everything is coated in the creamy sauce.

    Serve immediately.

Notes

  • Slice the steak thinly for the most tender stroganoff.

  • Add a splash of pasta water if the sauce becomes too thick.

  • If you prefer a milder flavor, substitute gorgonzola for the blue cheese.
