For the Brine

  • 1 gallon water
  • 1 cup kosher salt
  • ¾ cup brown sugar
  • 2 tablespoons Prague Powder #1 (optional)
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon paprika
  • 1 teaspoon coarse black pepper
  • 2 bay leaves
  • Ice

Turkey

  • 4 large turkey legs

Dry Rub

  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon smoked paprika

Instructions

Step 1

Combine the water, kosher salt, brown sugar, Prague Powder (if using), garlic powder, onion powder, paprika, pepper, and bay leaves in a large stockpot. Stir until the salt and sugar dissolve. Allow the brine to cool completely before adding ice.

Step 2

Place the turkey legs into a large food-safe brining bag or container and pour the cooled brine over them. Refrigerate for 12–24 hours.

Step 3

Remove the turkey legs from the brine and pat them completely dry with paper towels. Refrigerate uncovered for 1–2 hours to dry the skin.

Step 4

Mix together the dry rub ingredients and season all sides of the turkey legs evenly.

Step 5

Preheat your smoker to 275°F using apple, cherry, pecan, or hickory wood.

Step 6

Smoke the turkey legs for 3–4 hours until the internal temperature reaches 175–180°F.

Step 7

Remove from the smoker and rest for 10–15 minutes before serving.

Notes

  • Prague Powder #1 is optional but gives the turkey legs their authentic Disney-style pink color and cured flavor.
  • Apple and cherry wood provide a milder smoke, while hickory creates a stronger barbecue flavor.
  • Cook to temperature rather than time since turkey legs vary in size.
