Bring the magic of Disney home with these giant smoked turkey legs! Brined overnight for maximum flavor and slow-smoked until juicy, tender, and packed with that signature smoky taste, this easy copycat recipe is perfect for backyard BBQs, game day, or your next Disney-themed party.
Combine the water, kosher salt, brown sugar, Prague Powder (if using), garlic powder, onion powder, paprika, pepper, and bay leaves in a large stockpot. Stir until the salt and sugar dissolve. Allow the brine to cool completely before adding ice.
Step 2Place the turkey legs into a large food-safe brining bag or container and pour the cooled brine over them. Refrigerate for 12–24 hours.
Step 3Remove the turkey legs from the brine and pat them completely dry with paper towels. Refrigerate uncovered for 1–2 hours to dry the skin.
Step 4Mix together the dry rub ingredients and season all sides of the turkey legs evenly.
Step 5Preheat your smoker to 275°F using apple, cherry, pecan, or hickory wood.
Step 6Smoke the turkey legs for 3–4 hours until the internal temperature reaches 175–180°F.
