This Dirty Bird spicy chicken sandwich features crispy fried chicken cutlets topped with lettuce, pickles, tomato, and drippy spicy mayo on a toasted brioche bun. A crunchy, juicy sandwich that’s better than fast food.

Ingredients

Chicken

2 large chicken breasts, sliced into cutlets
1 cup buttermilk
1 teaspoon hot sauce

1 cup flour
½ cup cornstarch

1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon cayenne pepper
½ teaspoon black pepper
1 teaspoon salt

oil for frying


Spicy Sauce

½ cup mayonnaise
1 tablespoon hot sauce
1 teaspoon smoked paprika
½ teaspoon garlic powder
1 teaspoon honey (optional)


Sandwich

4 brioche buns
lettuce leaves
dill pickle slices
1 tomato, sliced
½ red onion, thinly sliced
butter for toasting buns

Instructions

  1. Marinate the chicken
    In a bowl combine buttermilk and hot sauce. Add chicken cutlets and marinate at least 30 minutes.

  2. Prepare the coating
    In a shallow dish mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.

  3. Dredge the chicken
    Remove chicken from buttermilk and coat in the flour mixture. For extra crunch dip again in buttermilk and dredge again.

  4. Fry the chicken
    Heat oil to 350°F. Fry chicken cutlets 4–5 minutes per side until golden brown and cooked through.

  5. Make the spicy sauce
    Whisk together mayonnaise, hot sauce, smoked paprika, garlic powder, and honey.

  6. Toast the buns
    Butter brioche buns and toast in a skillet until golden.

  7. Assemble the sandwiches
    Spread spicy sauce on buns. Add lettuce, crispy fried chicken, tomato, pickles, onion, and more spicy sauce.

Serve immediately.

Notes

For extra crispy chicken, add 2 tablespoons of the buttermilk marinade to the flour mixture and mix lightly with your fingers to create craggy crumbs before dredging.
