Description

This Creamy Taco Rice Casserole is the ultimate comfort food dinner. Made with seasoned ground beef, rice, black beans, corn, a creamy cheese sauce, and topped with crunchy crushed Doritos, it’s an easy family-friendly casserole perfect for busy weeknights.

  • 1 pound lean ground beef
  • 1 small sweet onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups cooked white rice
  • 1 (10-ounce) can Rotel tomatoes, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 2 cups shredded Mexican cheese blend
  • Salt and pepper to taste

Dorito Topping

  • 2 cups crushed Nacho Cheese Doritos
  • 1 tablespoon melted butter
  • ½ cup shredded Mexican cheese blend

Optional Garnishes

  • Green onions
  • Fresh cilantro
  • Sour cream
  • Diced tomatoes
  • Jalapeños
  • Avocado


Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  • In a large skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess grease.
  • Add garlic and cook for 30 seconds.
  • Stir in taco seasoning and drained Rotel tomatoes.
  • Reduce heat to low and add cream cheese, cream of chicken soup, and sour cream. Stir until smooth and creamy.
  • Mix in cooked rice, black beans, corn, and 2 cups shredded cheese.
  • Transfer mixture to prepared baking dish and spread evenly.
  • Bake uncovered for 20 minutes.
  • Combine crushed Doritos and melted butter.
  • Remove casserole from oven and sprinkle Dorito mixture evenly over top.
  • Sprinkle with remaining cheese.
  • Return to oven and bake 10-15 minutes longer until hot, bubbly, and cheese is melted.
  • Let rest 5 minutes before serving.
  • Garnish with green onions, cilantro, sour cream, or your favorite taco toppings.

Notes

  • Cool Ranch Doritos can be substituted for Nacho Cheese Doritos.
  • Ground turkey or chicken works well in place of beef.
  • For extra spice, add diced jalapeños or pepper jack cheese.
  • Assemble ahead and refrigerate up to 24 hours before baking.
  • Freeze without the Dorito topping for up to 3 months.
