This creamy taco pasta is a quick and easy one-pot dinner loaded with seasoned ground beef, tender pasta, melty cheese, and bold taco flavor. Topped with sour cream and crunchy tortilla chips, it’s the ultimate comfort food for busy weeknights.
Ingredients

1 lb ground beef

1 small onion, diced

3 cloves garlic, minced

2 tablespoons taco seasoning

2 cups beef broth

1 (10 oz) can diced tomatoes with green chilies (Rotel)

8 oz pasta shells (or rotini)

½ cup heavy cream

1 cup shredded cheddar cheese

½ cup shredded Monterey Jack cheese

½ cup black beans, drained and rinsed

½ cup corn (optional)

Salt and pepper, to taste
Instructions

Brown the Beef
In a large skillet or pot over medium heat, cook ground beef and diced onion until browned and fully cooked. Drain excess grease. -
Add Garlic & Seasoning
Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant. -
Add Liquids & Pasta
Pour in beef broth and diced tomatoes with green chilies. Stir in uncooked pasta, black beans, and corn. -
Simmer
Bring to a boil, then reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed. -
Make It Creamy
Reduce heat to low. Stir in heavy cream and shredded cheeses until melted and smooth. -
Season & Serve
Taste and adjust salt and pepper. Serve hot topped with sour cream, crushed tortilla chips, and fresh cilantro.
