This creamy pickle chicken salad is loaded with tender shredded chicken, crunchy dill pickles, fresh herbs, and a tangy, creamy dressing. Perfect for sandwiches, wraps, or easy meal prep lunches.

- 2 ½ cups cooked chicken (shredded or chopped)
- ¾ cup dill pickles (finely chopped)
- ¼ cup red onion (finely diced)
- 2 tablespoons fresh dill (chopped)
- ½ cup mayonnaise
- 2 tablespoons sour cream (or Greek yogurt)
- 1 tablespoon Dijon mustard
- 1–2 tablespoons pickle juice (to taste)
- ½ teaspoon garlic powder
- Salt and black pepper (to taste)
Instructions
- In a large bowl, add shredded chicken, chopped dill pickles, red onion, and fresh dill.
- Add mayonnaise, sour cream, Dijon mustard, pickle juice, and garlic powder.
- Season with salt and black pepper to taste.
- Stir everything together until well combined and creamy.
- Taste and adjust seasoning or pickle juice as needed.
- Chill for at least 30 minutes for best flavor (optional but recommended).
- Serve on sandwiches, wraps, crackers, or over lettuce.

- Rotisserie chicken works great for quick prep
- Add pickle juice gradually to control tanginess
- For extra crunch, add chopped celery
