Description

This creamy pickle chicken salad is loaded with tender shredded chicken, crunchy dill pickles, fresh herbs, and a tangy, creamy dressing. Perfect for sandwiches, wraps, or easy meal prep lunches.


Ingredients

  • 2 ½ cups cooked chicken (shredded or chopped)
  • ¾ cup dill pickles (finely chopped)
  • ¼ cup red onion (finely diced)
  • 2 tablespoons fresh dill (chopped)
  • ½ cup mayonnaise
  • 2 tablespoons sour cream (or Greek yogurt)
  • 1 tablespoon Dijon mustard
  • 12 tablespoons pickle juice (to taste)
  • ½ teaspoon garlic powder
  • Salt and black pepper (to taste)


Instructions

  • In a large bowl, add shredded chicken, chopped dill pickles, red onion, and fresh dill.
  • Add mayonnaise, sour cream, Dijon mustard, pickle juice, and garlic powder.
  • Season with salt and black pepper to taste.
  • Stir everything together until well combined and creamy.
  • Taste and adjust seasoning or pickle juice as needed.
  • Chill for at least 30 minutes for best flavor (optional but recommended).
  • Serve on sandwiches, wraps, crackers, or over lettuce.

  • Rotisserie chicken works great for quick prep
