Creamy Garlic Basil Dressing | Easy High-Protein Dip

This creamy garlic basil dressing combines protein-rich Greek yogurt with fresh basil, garlic, lemon, olive oil, and nutty Asiago cheese. Serve it as a salad dressing, vegetable dip, sandwich spread, or creamy sauce for grilled chicken and roasted vegetables.

 

Ingredients

  • 1 cup plain Greek yogurt
  • ½ cup freshly grated Asiago cheese
  • ¾ cup loosely packed fresh basil leaves
  • 2 garlic cloves, peeled
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 24 tablespoons cold water, as needed

Instructions

  1. Add the Greek yogurt, Asiago cheese, basil leaves, garlic, olive oil, lemon juice, salt, and black pepper to a blender or food processor.
  2. Blend until the basil is finely chopped and the dressing is smooth and creamy. Stop and scrape down the sides of the blender as needed.
  3. Add cold water one tablespoon at a time, blending after each addition, until the dressing reaches your preferred consistency.
  4. Taste and adjust the salt, black pepper, or lemon juice as needed.
  5. Serve immediately or transfer the dressing to an airtight container and refrigerate it for at least 30 minutes to allow the flavors to develop.

Notes

  • Use freshly grated Asiago for the smoothest texture and best flavor.
  • Start with one garlic clove if you prefer a milder garlic flavor.
  • Leave out the water for a thick vegetable dip.
  • Add additional water one tablespoon at a time for a pourable salad dressing.
  • Fresh basil may darken slightly as the dressing sits. This is normal and will not affect the flavor.
  • Store in an airtight container in the refrigerator for up to four days.
  • Stir well before serving. If the dressing thickens, add a teaspoon of cold water.
  • Freezing is not recommended because the yogurt may separate after thawing.
  • Parmesan or Pecorino Romano can be substituted for the Asiago cheese.
