Tender pearl onions simmered in a rich garlic-herb cream sauce make an easy, classic holiday side dish for Thanksgiving, Christmas, or Easter.

  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 1 (14- to 16-ounce) bag frozen pearl onions
  • 2 bay leaves
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Instructions

  1. Melt the butter in a large skillet or saucepan over medium heat. Add the garlic and cook for 30 seconds, until fragrant.
  2. Whisk in the flour and cook for 1 minute, stirring constantly.
  3. Slowly whisk in the chicken broth, followed by the heavy cream. Add the bay leaves, salt, and pepper.
  4. Stir in the frozen pearl onions. Bring the mixture to a gentle simmer, then reduce the heat to medium-low.
  5. Cook uncovered for 15 to 18 minutes, stirring occasionally, until the onions are tender and the sauce is thick enough to coat the back of a spoon.
  6. Remove the bay leaves. Stir in the parsley and chives. Taste, adjust the salt and pepper as needed, and serve warm.

Notes

Frozen pearl onions make this recipe quick and easy because they are already peeled. The sauce thickens a little more as it cools; stir in a splash of chicken broth or cream when reheating, if needed. Store leftovers covered in the refrigerator for up to 3 days.
