Brown Butter Cookie Dough

  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt

Sweet & Salty Mix-Ins

  • 1 cup semi-sweet chocolate chips
  • ½ cup white chocolate chips
  • ½ cup butterscotch chips
  • 1 cup M&Ms
  • 1 cup crushed pretzels
  • 1 cup crushed kettle-cooked potato chips

For Finishing

  • Flaky sea salt

Instructions

  • In a saucepan over medium heat, melt the butter. Continue cooking, stirring frequently, until it turns golden brown and smells nutty. Remove from heat and let cool for 10–15 minutes.
  • In a large bowl, whisk together the brown butter, brown sugar, and granulated sugar until smooth.
  • Add eggs and vanilla extract. Mix until fully combined.
  • Stir in flour, baking soda, baking powder, and salt until just combined. Do not overmix.
  • Fold in chocolate chips, white chocolate chips, butterscotch chips, M&Ms, pretzels, and potato chips.
  • Cover and chill the dough for at least 1 hour.
  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Scoop large cookie dough balls and place them spaced apart on the baking sheet.
  • Bake for 10–12 minutes, until edges are golden and centers are still soft.
  • Sprinkle with flaky sea salt while warm. Let cool slightly before serving.

  • Browning the butter adds deep caramel flavor—don’t skip it
  • Use kettle chips for the best crunch
  • Slightly underbake for soft, chewy centers
  • Press extra mix-ins on top before baking for bakery-style cookies
  • Dough can be frozen and baked later
