Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  3. Beat in the eggs one at a time, then add the vanilla and honey.
  4. In a separate bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Scoop dough into large balls (about ¼ cup each) and place 3 inches apart on prepared baking sheets. Gently flatten the tops.
  7. Bake for 11–13 minutes, just until the edges are lightly golden. The centers should remain soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. For the frosting, beat the butter until smooth. Add powdered sugar, honey, cinnamon, vanilla, salt, and enough heavy cream to create a fluffy, spreadable frosting.
  10. Spread a generous layer of frosting over each cooled cookie using an offset spatula or spoon.
  11. Finish with a drizzle of honey and a light sprinkle of cinnamon sugar before serving.
