For the eggplant and potatoes

  • 3 large eggplants, sliced into ¼-inch rounds
  • 2 medium russet potatoes, peeled and sliced into -inch rounds
  • ¼ cup olive oil, divided
  • 1½ teaspoons kosher salt, plus more for salting eggplant
  • ½ teaspoon black pepper

For the meat sauce

  • 2 tablespoons olive oil
  • pounds ground beef, ground lamb, or a combination
  • 1 large yellow onion, finely diced
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • ½ cup dry red wine or beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon dried oregano
  • 1 tablespoon dried mint
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ tablespoon ground cinnamon
  • ¼ teaspoon ground allspice
  • 1 bay leaf
  • ¼ cup chopped fresh parsley

For the béchamel

  • 6 tablespoons butter
  • ½ cup all-purpose flour
  • 4 cups whole milk, warmed
  • 2 egg yolks
  • ¾ cup finely grated Parmesan cheese
  • ¼ teaspoon ground nutmeg
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Arrange eggplant on paper towel-lined baking sheets. Sprinkle with salt and let sit 30 minutes. Pat dry.
  2. Heat oven to 425°F. Brush eggplant with olive oil and roast 18 to 22 minutes, flipping halfway through. Toss potatoes with olive oil, salt, and pepper. Roast on a separate pan for 20 to 25 minutes, until tender. Lower oven to 375°F.
  3. Heat olive oil in a large skillet. Brown meat, then drain excess grease. Add onion and cook until soft. Stir in garlic for 30 seconds.
  4. Add tomato paste, mint, oregano, salt, pepper, cinnamon, and allspice. Cook 1 minute. Add wine, crushed tomatoes, and bay leaf. Simmer uncovered 20 to 25 minutes until thick. Remove bay leaf and stir in parsley.
  5. Melt butter in a saucepan. Whisk in flour and cook 1 minute. Slowly whisk in warm milk. Cook 5 to 7 minutes, whisking, until thickened.
  6. Whisk egg yolks in a small bowl. Slowly whisk in ½ cup hot béchamel, then add mixture back to saucepan. Stir in Parmesan, nutmeg, salt, and pepper.
  7. Grease a 9×13-inch baking dish. Layer potatoes, half the eggplant, meat sauce, and remaining eggplant. Spread béchamel evenly over top.
  8. Bake uncovered for 40 to 45 minutes, until golden and bubbling. Rest 30 minutes before slicing.

Notes

  • For freezer meals, assemble in two 8×8-inch foil pans. Cool completely, wrap tightly, and freeze up to 3 months.
  • Bake from frozen, covered, at 375°F for about 1 hour. Uncover and bake 20 to 30 minutes more, until hot and golden.
