Soft, fluffy Cinnamon Sugar French Toast Muffins coated in a buttery cinnamon sugar topping. These easy breakfast muffins taste just like classic French toast and are perfect for brunch, holidays, or cozy weekend mornings.
Ingredients
Muffins
1½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
¾ cup milk
½ cup granulated sugar
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1 tablespoon maple syrup (optional)
Cinnamon Sugar Topping
¼ cup unsalted butter, melted
½ cup granulated sugar
1 tablespoon ground cinnamon
Instructions

Preheat the oven
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners. -
Mix dry ingredients
In a large bowl whisk together flour, baking powder, salt, and cinnamon. -
Mix wet ingredients
In another bowl whisk eggs, milk, sugar, melted butter, vanilla extract, and maple syrup. -
Combine batter
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. -
Fill muffin tin
Divide the batter evenly between the 12 muffin cups, filling each about ¾ full. -
Prepare topping
Mix sugar and cinnamon in a small bowl. Brush the muffin tops with melted butter and sprinkle generously with the cinnamon sugar mixture. -
Bake
Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. -
Cool and serve
Let muffins cool in the pan for 5 minutes, then transfer to a rack. Serve warm with a drizzle of maple syrup.
Notes
For extra flavor, drizzle warm maple syrup over the muffins before serving. These muffins also taste great with powdered sugar or fresh berries.
