Description

Soft, fluffy Cinnamon Sugar French Toast Muffins coated in a buttery cinnamon sugar topping. These easy breakfast muffins taste just like classic French toast and are perfect for brunch, holidays, or cozy weekend mornings.


Ingredients

1½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
¾ cup milk
½ cup granulated sugar
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1 tablespoon maple syrup (optional)

Cinnamon Sugar Topping

¼ cup unsalted butter, melted
½ cup granulated sugar
1 tablespoon ground cinnamon


Instructions

  1. Preheat the oven
    Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.

  2. Mix dry ingredients
    In a large bowl whisk together flour, baking powder, salt, and cinnamon.

  3. Mix wet ingredients
    In another bowl whisk eggs, milk, sugar, melted butter, vanilla extract, and maple syrup.

  4. Combine batter
    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  5. Fill muffin tin
    Divide the batter evenly between the 12 muffin cups, filling each about ¾ full.

  6. Prepare topping
    Mix sugar and cinnamon in a small bowl. Brush the muffin tops with melted butter and sprinkle generously with the cinnamon sugar mixture.

  7. Bake
    Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool and serve
    Let muffins cool in the pan for 5 minutes, then transfer to a rack. Serve warm with a drizzle of maple syrup.

Notes

For extra flavor, drizzle warm maple syrup over the muffins before serving. These muffins also taste great with powdered sugar or fresh berries.
