For the Beef

  • pounds flank steak, thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable oil

Vegetables

  • 4 cups broccoli florets
  • ½ cup small diced red bell pepper
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Sauce

  • ½ cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 1 cup beef broth
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1 teaspoon black pepper

Garnish

  • Sesame seeds
  • Sliced green onions

For Serving

  • Steamed jasmine rice

Instructions

  • Toss the sliced flank steak with 2 tablespoons of cornstarch until evenly coated.
  • In a medium bowl, whisk together the soy sauce, oyster sauce, brown sugar, beef broth, sesame oil, 2 tablespoons cornstarch, garlic, ginger, and black pepper until smooth.
  • Heat the vegetable oil in a large skillet or wok over high heat.
  • Cook the beef in batches for 2–3 minutes until browned. Remove to a plate.
  • Add the broccoli and diced red peppers to the skillet. Stir-fry for about 4 minutes until the broccoli is bright green and crisp-tender.
  • Return the beef to the skillet.
  • Pour the prepared sauce over everything and stir until evenly coated.
  • Cook for another 2–3 minutes, stirring frequently, until the sauce thickens and becomes glossy.
  • Remove from the heat and garnish with sesame seeds and sliced green onions.
  • Serve immediately over steamed jasmine rice.

Notes

  • Slice the steak against the grain for the most tender bites.
  • Freeze the steak for 20 minutes before slicing to make thin cuts easier.
  • Cook the beef in batches so it browns instead of steams.
  • Fresh broccoli provides the best texture, but frozen broccoli can be used if thawed and drained first.
