Description

These Chicken Cordon Bleu Mashed Potato Bowls are loaded with crispy popcorn chicken, savory ham cubes, melty Swiss cheese, and a creamy Dijon parmesan sauce poured over fluffy mashed potatoes. An easy comfort food dinner that comes together in about 30 minutes.

Mashed Potato Base

4 cups mashed potatoes
2 tablespoons butter
½ cup milk or cream
salt and pepper to taste

Chicken Cordon Bleu Toppings

1 bag frozen popcorn chicken
1 cup cooked ham cubes
1 cup shredded or sliced Swiss cheese

Creamy Dijon Cordon Bleu Sauce

2 tablespoons butter
2 tablespoons flour
1½ cups milk
½ cup chicken broth
1 tablespoon Dijon mustard
½ cup grated parmesan cheese
½ teaspoon garlic powder
½ teaspoon black pepper
salt to taste

Optional garnish: chopped parsley


Instructions

  1. Cook the frozen popcorn chicken according to package instructions until golden and crispy.

  2. Prepare mashed potatoes if not already made. Keep warm.

  3. In a saucepan over medium heat, melt the butter.

  4. Whisk in the flour and cook for about 1 minute to create a roux.

  5. Slowly whisk in the milk and chicken broth until smooth.

  6. Stir in Dijon mustard, garlic powder, black pepper, and salt. Simmer until the sauce thickens.

  7. Add the parmesan cheese and whisk until melted and creamy.

  8. Spoon mashed potatoes into bowls.

  9. Top with popcorn chicken, ham cubes, and Swiss cheese.

  10. Pour the warm Dijon sauce over the bowls so the cheese melts slightly.

  11. Garnish with parsley and serve immediately.
