For the Smash Tacos
- 1 pound ground chicken
- 8 small flour tortillas
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
For the Caesar Salad Topping
- 4 cups chopped romaine lettuce
- 1/2 cup Caesar dressing
- 1/2 cup shaved parmesan cheese
- 1 cup croutons, lightly crushed
- Fresh cracked black pepper
- Lemon wedges, optional
Instructions
- In a bowl, combine the ground chicken, garlic powder, onion powder, Italian seasoning, salt, and black pepper until evenly mixed.
- Spread a thin layer of the chicken mixture evenly onto one side of each tortilla.
- Heat olive oil in a large skillet or griddle over medium-high heat.
- Place the tortillas chicken-side down onto the hot skillet and press lightly with a spatula. Cook for 4–5 minutes until the chicken is cooked through and crispy.
- Flip and cook the tortilla side for another 1–2 minutes until golden and crisp.
- In a separate bowl, toss the chopped romaine lettuce with Caesar dressing and parmesan cheese.
- Top each taco with the Caesar salad mixture and crushed croutons.
- Finish with extra parmesan, cracked black pepper, and a squeeze of lemon juice if desired. Serve immediately.
Notes
- Use thin flour tortillas for the crispiest texture.
- Don’t spread the chicken too thick or it won’t crisp properly.
- Add crispy onions or diced avocado for extra flavor.
- Best served fresh while the tortillas are still crispy.
